Hidden in the heart of Montreal’s business district in a century old building surrounded by high rises, Jatoba is as much about business lunch than it is about late dinner with friends. Inspired by classic Japanese dishes Jatoba’s Chef Olivier Vigneault offers each patron a unique culinary experience by playfully merging modern techniques with traditional flavours.

Either it be at the terrace bar watching the chef in action or sitting inside by the replace, every minute spent at Jatoba will be one to remember. Open from 8AM, to late at night.

Olivier Vigneault / Executive Chef

Born in Quebec City, Olivier Vigneault studied and explored French cooking before delving into Asian cuisine. After completing internships in Quebec and at a Michelin-starred restaurant in France, he became co-owner of Yuzu Sushi. He later moved to Montreal to become Executive Chef at Miso, and then Head Chef at Kaizen and Park. He is currently Executive Chef at Jatoba restaurant, and he recently helped develop the menu for Westwood, where flavour and creativity converge to offer diners a highly emotional culinary experience.

Marc-André Nadeau / Sommelier

Marc-André Nadeau has been the resident sommelier at Jatoba since 2016. From his humble beginnings as a dishwasher at the age of 14, Marc-André worked his way up through every restaurant job you can think of, both in the kitchen and front of house. His university studies led him abroad for long periods of time, where he developed a passion for food and wine. Back in Montreal, he seized opportunities to work for several renowned groups, including Toqué!, Joe Beef, Pastaga and Dieu du Ciel, to name a few. In 2015, he registered for the professional sommelier program at ITHQ, where he quickly distinguished himself and was encouraged by his professors to pursue post-graduate studies. With the support of A5, he obtained the Court of Master Sommeliers certification, and then went to London to get his WSET Diploma, the first step towards becoming Master of Wine. In addition to his work at Jatoba, he is now the sommelier for nearly 10 other A5 establishments.
